Swedish Cream and Berries

The Perfect Fancy Christmas Dessert


This Christmas dessert just so happens to be a favorite of my Mama's. It's relatively easy to make, but has a big impact; it can be made in advance and it's delicious. Aka the perfect Christmas Eve dessert.

Ingredients

1 envelope Knox unflavored gelatin
1/4 cup cold water
2 1/3 cup whipping cream
1 cup sugar
1 pint sour cream
1 tsp. vanilla
1 large sack frozen raspberries, at room temperature

Directions

In a small bowl, dissolve the gelatin in the water.

Let stand 5 minutes to soften. Place cream in a saucepan. Add sugar and gelatin.

Whisk over low heat until the mixture reaches a creamy consistency.

Remove from heat and cool until thick. You can put it in the refrigerator for an hour to hasten thickening. Mix the sour cream and vanilla together in a large mixing bowl.

Thoroughly fold in the cream and sugar mixture.

Refrigerate until needed. Layer cream and berries in pretty glasses and serve. Note: if your berries are still frozen, you can microwave them in a bowl for 15-30 seconds to thaw them.
