Hummus Recipe

My Favorite, Lemon-y Recipe

My favorite hummus hails from a restaurant near my parents' house in Houston, and I love it because it's so bright and lemon heavy. It's really quite something. It's not as if there's something radically different about the recipe, but it just tastes better to me. This is my attempt at replicating it. Even if it's not the exact same, it's close and I prefer this to the store-bought version! Great with veggies or pita bread.

Ingredients

2 cans chickpeas, drained (reserve 1/4 cup)
2 cloves garlic
1 1/2 tsp. kosher salt
1/2 tsp. ground cumin
1/3 cup tahini
6 Tbs. lemon juice
1/4 cup extra virgin olive oil + a little extra to drizzle at the end
Smoked paprika for garnish

Directions

In a food processor, process the garlic, salt and cumin.
