Butterscotch Brownies

AKA "Gone in a Flash Brownies"


This is a great recipe from Helen Corbitt. They're not actually brownies at all, but that's what Helen called them, so it's good enough for me. In the past, I've whipped these puppies up for the Super Bowl, for a snack for our Bible Study friends, or just for snacking on throughout the week. They're so quick and easy to make, and yet, they taste delicious and special as well. The coconut is optional if you don't like a little something extra in there. Personally, I like it. I think it makes them less boring. Either way, they are scrumptious and I never seem to make enough.

Ingredients:

8 Tbs. melted butter
2 cups dark brown sugar (or light. It doesn't really matter)
2 eggs
1 tsp. salt
1 1/2 cups flour
2 tsp. baking powder
1 tsp. vanilla
1/2 cup shredded coconut

Directions:

Melt the butter.

Mix the dry ingredients together. I use a pastry cutter to break up the brown sugar really well.

Add the wet ingredients and mix together completely.

Spread evenly in a 9x9 baking pan. Bake at 350 degrees for 35-45 minutes.

Cool and serve! Easy peasy.
